Pecan Butterscotch Cake! every baker must try it!


Last wiken dok pikir..kek ape ek nak buat.kali ni harus la lari dari choc kek.ye la asek2 choc cake..tak pon brownie...so tetiba dpt inspirasi nak wat kek macam kek SR tu..
namanya Pecan Butterscotch Cake...kacang Pecan pon tatau rupa cane
Sabtu lepas kenduri kahwin cari bahan dulu..mak haiii...mahal banget kacang Pecan ni tau!! RM8.90 per 100gm..beli 100gm je la. Lagi mahal dr Walnut..sb tu la Kek SR mahal

Kek ni memang banyak steps..bersabaq la naa.
Mari ikut langkah demi langkah!Pembuatan kek ini terbahagi kepada 4 bahagian. Sila la bertabah lagi bersabaq ketika membuatnya / mahupun membacanya!
kalau tak sabaq I suggest beli aje kat Secret Recipe..

Part I: Kek Butterscotch
  • 3 3/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 2 1/2 teaspoons coarse salt ( guna garam halus)
  • 10 ounces (2 1/2 sticks) unsalted butter, softened ( guna butter biasa je)
  • 2 1/2 cups packed dark-brown sugar ( brown sugar je, saya kurangkan sket gula sbb kek ni amat manis!)
  • 4 large eggs, room temperature 
  • 1 tablespoon plus 1 teaspoon pure vanilla extract ( esen vanila)
  • 1 1/4 teaspoons rum, preferably golden or dark ( tak payah!)
  • 1 1/4 cups buttermilk, room temperature ( guna susu campur dengan 1 sudu besar cuka, biar few minutes)
  • Cara-cara:
  • 1. Pukul gula dan butter sampai kembang. Masukkan telur satu persatu, pukul dulu satu persatu baru masuk next egg. Masukkan esen vanila.
  • 2. Reduce speed mixer dan masukkan secara alternate buttermilk dan tepung sampai habis.
  • 3. Pukul lagi sehingga adunan sebati.
  • 4. Tuang dalam loyang 10 inch sbb adunan ni banyak..bakar selama 45-50 min..tengok gak slalu time hujung2..takut overbaked. Dah siap keluarkan dan berikan rehat. 
  • 5. Bakar gak skali 



Beginilah rupa kacang Pecan yer yg mahal yg amats tuh..Yati siap boleh tak jadi nak wat kek ni sbb kacang mahal..eekekke

Part II: Butterscotch buttercream
  • 12 ounces unsalted butter (3 sticks), 1 stick left whole, 2 sticks cut into small pieces, softened ( sy guna 230gm butter biasa utk buat sosnya dulu..then 1 buku unsalted butter masa mix using mixer, total kurang dr resipi asal)
  • 2 cups packed dark-brown sugar ( saya guna 1 cup ++ je brown sugar)
  • 1 cup heavy cream ( tade, so guna susu full cream 1/2 cup)
  • 1/2 teaspoon coarse salt
  • 20 ounces cream cheese, softened 9 (guna 275gm cream cheese=1.5 ketol cheese yg ada in stok)
  • 1/2 cup confectioners' sugar, sifted ( tak masukkan langsung seriesly sbb dah manis)
Cara-cara:
1. Cairkan dalam periuk kecik butter 230gm sampai cair. Masukkan brown sugar, susu, garam dan kacau sampai gula hancur....ianya akan menjadi cecair yg tak berapa likat..cair jer...biarkan sejuk.
2. Pukul unsalted butter dan cheese sampai kembang. Masukkan brown-butter mixture tadi tu dan pukul sebati. 
3. Masa buat ni pandai2 la rasa..kalau manis sgt jgn tambah lg gula icing tu..saya tak tambah.
4. Sejukkan selama 2 jam / 1 mlm dlm chiller. My kes, biarkan 1 mlm dlm chiller.

Nilah rupanya brown-butter mixture tuh





Buttercream nak berehat 1 mlm di chiller..bungkus dulu elok2

Part III: Butterscotch caramel sauce


  • 2/3 cup packed dark-brown sugar
  • 3 ounces (6 tablespoons) butter, cut into pieces
  • 1/2 cup light corn syrup
  • 1/4 teaspoon coarse salt
  • 1/2 cup heavy cream ( tade, ganti susu)
  • 2 cups pecan halves, toasted and chopped, plus more halves for garnish
Cara-cara:
1. Copy je dr website, Malas dah! haha Mix sugar, butter, corn syrup, and salt in a small saucepan over medium heat, and cook, stirring, until sugar dissolves. Bring to a boil, and cook for 2 minutes. Remove from heat, and whisk in cream. Return to heat, and cook for 2 minutes. Let cool slightly.

Awas! sgt manis! elok kurangkan lg gula



Part IV: Frosting, assembling and decorating cake
Fuhh penat tak baca? dah kata dah..entry ni mmg panjang tau!! ehehe

1. Potong kek kepada 3 bahagian guna benang camni:


2. Ok siap dah potong 3..dapur dah berterabur

3. Sapu dulu buttercream yg dah berehat 1 mlm kat chiller tu...lepas tu..tabur kacang2 pecan yg dah dibakar..ulang sampai 2 lapis
4. Frost all cake with the buttercream..then masukkan dalm chiller about 30min before kite curahkan Butterscotch sauce.

5. Curahkan butterscotch sauce & kekacang pecan dengan penuh kasih sayang

Dan hasilnya....



gigh weh menulis sampai berjam2 ni sejak kui 7am pagi tadi tau
